19th Hole Sauce

Here's where you can shine as an expert on herbs and spices.  This sauce is full of fabulous flavour and the consistency is nice and heavy - the perfect accompaniment for roast pork or beef.



2 Tbsp dried minced onion
2 Tbsp brown sugar
1 Tbsp whole mustard seeds, slightly crushed
2 tsp. paprika
1 tsp dried oregano, crushed
1 tsp chili powder
1 tsp black pepper
1/2 tsp salt
1/2 tsp ground cloves
1 bay leaf
1 cup ketchup
1/2 cup water
2 Tbsp olive or cooking oil
2 Tbsp cider vinegar
2 Tbsp Worcestershire sauce
1 clove garlic, minced
2-3 drops liquid smoke (optional)

Mix all ingredients together in a medium saucepan.  Bring to boiling; reduce heat.  Simmer, uncovered, for 20-25 minutes or until sauce reaches desired consistency, stirring occasionally.  Remove bay leaf.


Cover and chill any remaining sauce for up to a week.
